Potatoes and Peas

Loosely based on a recipe I saw online and forgot. These are so buttery and yummy my oldest actually ate the peas. Astounding.

Ingredients:

4 medium potatoes, washed and cut into bite-sized chunks
1 cup frozen peas
2 T. butter
1/2 onion, halved lengthwise and cut into strips
1 clove garlic, minced
1 T. flour
1 cup milk
salt and pepper

1. In a small saucepan, melt butter and add onions. Cook for a couple minutes on medium heat, then add garlic. Continue to cook until fragrant and transparent, then set aside.

2. Meanwhile, bring potatoes to a boil in salted water. Once they start boiling, cook for 10 minutes.

3. After 10 minutes, add peas and continue to boil for another 5 minutes.

4. Drain potatoes and peas.

5. In emptied pot, add milk, flour, and salt and pepper to taste. Allow to cook for a minute or two, then add onions/garlic and peas/potatoes.

6. Allow potatoes to thicken on medium-low heat for 3-5 minutes. Serve.
